Today is my baby sisters birthday and I plan on making her some of her faves for her birthday. I went to this bakery around the corner from my job and purchased this delightful Strawberry shortcake for dessert.

Savory Fried Chicken
Smashed Potatoes

The chicken is currently in a milk brine. All this requires is soaking your chicken parts in a some 1% Milk and a few teaspoons of kosher salt.
It is extremely important that your oil is very hot for frying chicken. Test by tipping a piece of chicken in the oil, if it sizzles like crazy, you're ready.
Remove chicken from brine and pat dry. Coat with flour, shake off excess and add to oil. Once you have about 3-5 pieces in the pan, cover with a top and let go for a few minutes. Turn when brown, remove from oil and drain on paper towels.
I'll peel about a dozen russet potatoes and let them boil for a while. Once tender, drain the water and add a stick of butter and a few sprinkles of black pepper. Pull out your hand mixer and get to creaming those potatoes.
Take two bags of frozen string beans and simmer in some water for about ten minutes. Remove and drain in collander and prepare a saucepan with a few pats of butter. Add a few tablespoons of minced garlic to the butter and stir around for a few. Throw in string beans and saute.
VOILA! I feel like chicken tonight....
